Santenay « En Foulot »

Terroir

This cuvée originates from a plot of one hectare nestled in the Saint Jean valley in the locality known as ‘En Foulot’. Its clay-limestone soil, dotted with pebbles, and its eastern aspect create ideal conditions for producing grapes with high precision. This unique terroir gives the wine freshness and complexity.

Vinification & ageing

True to our traditional method, we start with gentle pressing in a vat, without adding SO2 at this stage, to preserve the authenticity of the grapes. The alcoholic fermentation is carried out entirely in French oak barrels, of which a third are new barrels, bringing richness and depth to the wine. Maturation, carried out on fine lees for 12 months, refines and brings balance to the cuvée, revealing all the finesse of its terroir.

Tasting

Santenay ‘En Foulot’ displays a bright and brilliant pale yellow robe. The nose draws us in with its precision, a mix of fresh citrus aromas and grilled and roasted notes, graciously bestowed through barrel ageing. On the palate, the wine is balanced and layered, revealing complex notes of fern and hazelnut. The finish, with beautiful length, leaves an elegant and flavourful impression. A refined cuvée to pair wonderfully with shellfish, noble fish or roasted poultry.
