Work in the vineyard

With our 22 hectares of vines, we are committed to sustainable agriculture and respect for the environment. Each plot is cultivated with care, favouring sustainable practices to preserve the health of the soils, the vines, and our terroir.

The majority of our plots today consist of high vines in wide rows, a specificity that offers us better natural protection against frost and diseases, while limiting agrochemicals and reducing tractor traffic and soil compaction. Of course, in wide rows, the number of vines per hectare is halved, but this approach allows us to reduce competition between the vine stocks and promotes root development. We believe quality takes precedence over quantity. This approach allows us to cultivate the vines in a gentler way while preserving the natural balance.

With this in mind, we also use the innovative technique of UV Boosting – a process that stimulates the natural defences of the vines through UV-C flashes. Thanks to this equipment, our vines develop better resistance to abiotic stresses such as frost or water stress, and fungal diseases such as mildew and powdery mildew. This method significantly reduces the use of fungicides, reinforcing our commitment to limit treatments while ensuring quality production.

Although we adopt practices similar to those used under various labels (organic, High Environmental Value, etc.), we have chosen not to seek these certifications. We want to maintain our freedom to intervene in exceptional situations, to be able to protect our vines and ensure the quality of our grapes. This flexibility allows us to find the right balance between respect for the environment and the production of quality wines.

Every decision, in the vineyards and in the winery, reflects our desire to produce wines that honour our terroir, while respecting nature and future generations.

Vinification & ageing of wines

At Domaine Gaudet, each wine is produced with utmost care, respecting traditional vinification methods that are adapted for each vintage. Our philosophy is simple – support the fermentation of the grapes so that they fully express their terroir, while limiting the use of inputs as much as possible.

The grapes, harvested at optimal maturity, are vinified according to the specificities of each plot. For our white wines, we choose slow and controlled fermentations, favouring the expression on the palate of the fine aromas and balance of Chardonnay. As for the reds, they benefit from delicate maceration, making it possible to extract all the richness of colours and tannins, while respecting the innate elegance of Pinot Noir.

After vinification, our wines continue to evolve in our cellars, where they are aged for a minimum of 12 months. We use a subtle balance of new and old barrels in order to preserve the intrinsic qualities of each terroir and to offer harmonious wines, without masking their identity.
