Terroir
On the prestigious climat of ‘Champimonts’, we cultivate 0.5 hectares of vines on a sandy soil over an ample clay base. Located on the hill of the famous ‘Clos des Mouches’ and facing due east, this plot benefits from the freshness of the wind coming from the Bouze-lès-Beaune valley. This unique microclimate ensures the slow and harmonious maturity of the grapes – perfect for bringing out the full potential of Chardonnay.
Vinification & ageing
Our method begins with skin fermentation, without the addition of SO2 at this stage, in order to preserve the authenticity of the grape. Maturation on fine lees continues in our cellar for 12 months, in French oak barrels, of which a third are new barrels.

Tasting
From the first nose, this Beaune Premier Cru appeals, with a captivating bouquet of yellow fruits, white flowers and a subtle touch of star anise. On the palate, it is a crystalline wine, marked by a beautiful freshness, thanks to its clay terroir. Its delicacy and vibrant floral notes pair perfectly with poultry or veal in a creamy sauce, fish tagine, or even sushi or grilled sea fish.
